- Internal Sales Training for Elders, Greater China – Conducting in house training for the Sales Team at Elders, China encompassing new products, popular beef cuts, yield management, the differences between dry age and wet age, Brand Story Education as well as conducting cooking demonstrations and cutting demonstrations at shows around Mainland China on behalf of Elders.
- Saison Food Service, Hong Kong - A leader in Hong Kong and Macau food distribution for over two decades, Alison delivered beef cuts training with a focus on yield management, Western cut portions and helped develop recipes for added value items.
- Indoguna Vina, Vietnam - In both Ho Chi Min and Hanoi, Alison hosted educational presentations and butchery class for clients of Indoguna Vina who saw her demonstrate how to break down beef primal cuts and secondary cuts, as well as attending her master butcher class.
Chef's Table & Promotional Dinners
- Shangri-La Hotels & Resorts, Shanghai - Two years of Australian beef and butchery promotion in the exclusive Jing'An Shangri-La 1515 West Steak House. With a curated menu consisted of over 40 different beef brands and cuts, I was the in house butcher assisting the discerning clientele select the cuts of beef for their meal at their table, as well as educating the consumer on the brand story, feeding programs, and dry age wet age tenderisation methods and answering any questions the customer may have about the provenance of their meal.
- InterContinental Hotels Group, Mainland China – As the guest butcher, Alison developed and delivered an interactive carving station to promote Australian beef brands to the groups global GM’s, Hotel Managers, Marketing Managers and F&B Directors.

- China International Import Expo - Representing Australian beef brands at the inaugural CIIE in 2018 in Shanghai, China. The world's first import themed national level expo, I promoted Australian produce to the attendees via demos, tastings, cook-a-longs and general engagement with the crowd.

- The Australian Chamber of Commerce Shanghai – BBQ's and Australian Beef Tasting for their members and sponsors at events to promote Australian beef and lamb brands. brands.
- Beef Australia 2021 - The iconic beef event held every three years, Butcher Girl Alison appeared on stage for the Nose To Tail dinner, breaking down beef on stage whilst highlighting the secondary cuts that appeared on the menu.
- Moree On A Plate - At one of NSW's premier foodie events, Alison broke down a carcass on stage, bringing out the secondary cuts over three sessions including how to prepare and cook them.
